The Vision Behind Wildflour Café
Wildflour Café is the brainchild of Matt Jones and Carrie Allsopp, a dynamic duo with over 15 years of experience in the restaurant and service industry. Their journey to Lisbon is a story of adventure and a shared dream of owning a small-town café. After years of seasonal work and travel, including stints in Florida, New Zealand, and France, Matt and Carrie settled in the North Country, drawn by the region’s natural beauty, outdoor recreation options, and small-town charm.
Carrie’s lifelong love of baking, cultivated from childhood baking sessions with her family, and honed through formal culinary training and diverse international experiences, forms the heart of Wildflour’s offerings. Matt’s background in marketing and business complements Carrie’s culinary expertise, making them the perfect team to bring this vision to life.
A Menu to Savor
Wildflour Café isn’t just a bakery; it’s a full-fledged café offering a range of breakfast and lunch options. Whether you’re an early bird looking for a hearty breakfast sandwich or someone craving a light lunch, Wildflour has you covered. The café’s menu features an assortment of delicious breakfast sandwiches, fruit and granola bowls, quiches, and various grab-and-go items.
For lunch, the café offers an array of sandwiches, soups, salads, and more, all made with the freshest ingredients. And, of course, there’s coffee—whether you’re in the mood for a simple cup of joe or a more elaborate espresso, cappuccino, or latte, Wildflour Café has it all.
Baked Goods Galore
Carrie’s passion for baking shines through in the café’s baked goods, which range from sweet to savory and everything in between. The selection includes classic favorites like scones, muffins, croissants, and crumb cakes, as well as more elaborate French pastries that showcase Carrie’s deep knowledge and skill. Whether you’re looking for a treat to enjoy with your coffee or something to take home for later, the bakery counter at Wildflour is sure to tempt you.
A Community-Centered Café
Matt and Carrie’s vision for Wildflour Café goes beyond serving great food. They are committed to creating a space where the community can come together. With indoor seating and plans for outdoor tables, Wildflour aims to be a welcoming spot for locals and tourists alike.
In addition to their regular menu, Matt and Carrie plan to offer custom desserts, cooking classes, and workshops. They envision Wildflour as more than just a café—it’s a place where people can connect, learn, and share experiences.
Grand Opening and Future Plans
Wildflour Café is slated to open on August 31, just in time for the bustling fall foliage season. With its prime location on Route 302, the café is perfectly positioned to attract locals and tourists who flock to the area during this time of year.
Matt and Carrie have big plans for Wildflour Café’s future. They hope to expand their outdoor seating, offer live music and events, and continue building strong ties with the Lisbon community. As they prepare for their grand opening, they are excited to welcome customers to their café and share their love of food and community.
